From the highlands of Guji, this unique lot comes from Wate Washing Station in the Hambela Wamena district — an area known for producing some of Ethiopia’s most expressive and sought-after coffees. Set at elevations over 2,000 meters, the region’s cool climate and rich red soil provide the perfect terroir for slow, even cherry development.
This is an experimental anaerobic natural process: freshly harvested cherries are sealed in oxygen-free tanks and fermented under controlled conditions before being sun-dried on raised beds. This innovative method enhances the complexity and intensity of the coffee, while preserving the vibrant character typical of Ethiopian heirloom varietals.
