Miriam has become a standout producer for her focus on varietal isolation and precise processing. This lot features the prized Pink Bourbon, a natural hybrid discovered in Huila that is celebrated for its complex sugar profile and silky mouthfeel.
For this specific lot, the cherries underwent a 72 to 96-hour anaerobic fermentation in sealed tanks. This oxygen-free environment allows for the development of lactic acids and intense tropical esters before the cherries are slowly moved to shaded patios for drying. The result is a highly structured cup that balances the "boozy" intensity of the process with the delicate, floral elegance inherent to Pink Bourbon.
